  • 1/4 cup (60 ml) mirin

  • 1 tablespoon (12 grams) sugar
  • 1/4 cup (60 ml) water
  • Optional aromatics: small piece of ginger or a smashed garlic clove

Instructions

  1. Bring water to a boil in a medium saucepan, enough to cover eggs by about 1 inch (2.5 cm).
  2. Prepare an ice bath by filling a large bowl with ice and cold water.
  3. Using a slotted spoon, gently lower room-temperature eggs into the boiling water to avoid cracking.
  4. Set a timer for 7 minutes for soft, custardy yolks. Add 30 seconds to 1 minute if you prefer firmer yolks.
  5. While eggs cook, whisk together soy sauce, mirin, sake (if using), sugar, and water until sugar dissolves. Add optional ginger or garlic if desired.
  6. When timer goes off, immediately transfer eggs to the ice bath to stop cooking. Chill for at least 5 minutes.
  7. Tap eggs lightly on a hard surface and peel under running cold water to remove shells cleanly.
  8. Place peeled eggs in a zip-top bag or airtight container with the marinade. Seal and refrigerate for 4 to 12 hours; longer marination intensifies flavor.
  9. Slice eggs in half lengthwise just before serving. The yolk should be creamy and the whites infused with marinade.
