Instructions

  1. Mix the Dry Ingredients: In a medium bowl, whisk together 2 ¾ cups (345g) all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  2. Cream Butter and Sugar: Using a stand or hand mixer, beat 1 cup (227g) softened unsalted butter with 1 cup (200g) granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  3. Add Egg and Vanilla: Beat in 1 large room temperature egg and 1 teaspoon pure vanilla extract until combined.
  4. Combine Wet and Dry: Gradually add the flour mixture to the butter mixture in three parts, mixing on low speed. Add 2 tablespoons milk (optional) with the last addition. Stop once flour disappears.
  5. Chill the Dough: Shape dough into a flat disk, wrap tightly in plastic wrap, and chill in the refrigerator for at least 1 hour or up to overnight.
  6. Preheat Oven and Prepare Pans: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.

  12. Decorate Cookies: Use piping bags or squeeze bottles to outline each cookie with icing, then flood the inside with thinned orange icing. Let dry for 10-15 minutes. Pipe green stems and any facial details last. Use toothpicks to spread icing evenly or fix bubbles.
  13. Dry Completely: Let decorated cookies dry at room temperature for 4-6 hours or overnight before stacking.
