  • Cinnamon sugar crust: ¼ cup granulated sugar mixed with 1 tbsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  4. Beat in the pumpkin purée, egg, and vanilla extract until fully combined.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  6. In a small bowl, blend the granulated sugar and cinnamon for the cinnamon sugar crust.
  7. Scoop dough with a cookie scoop or spoon (about 2 tbsp or 30 g per cookie). Roll each ball in the cinnamon sugar mixture until fully coated, then place 2 inches apart on baking sheets.
  8. Bake for 11-13 minutes or until edges are set and centers look slightly underbaked.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
