  • 1/4 cup (50g) granulated sugar
  • 1 tsp (6g) salt
  • 2 1/4 tsp (7g) instant yeast
  • 1 cup (240ml) warm milk (whole or 2%)
  • 2 tbsp (28g) unsalted butter, softened
  • 1 large egg, room temperature
  • Cinnamon Sugar Swirl Mixture:
  • 2 tbsp (15g) ground cinnamon
  • 1/3 cup (70g) packed light brown sugar
  • 3/4 cup (110g) raisins

Instructions

  1. Add warm milk (around 110°F / 43°C), softened butter, and egg to the bread pan first.
  2. Gently spoon in the bread flour, then sprinkle sugar and salt around the edges, keeping salt and yeast separate.
  3. Make a small well in the flour and add the instant yeast.
  4. In a small bowl, combine brown sugar and cinnamon, then stir in the raisins to make the swirl mixture.
  5. Select the “sweet bread” or “basic bread” cycle with a medium crust setting on the bread machine and press start.
  6. After the first kneading cycle (about 20-30 minutes), pause the machine and spread the cinnamon raisin mixture evenly over the dough in the pan, then resume the cycle.
  7. Let the bread machine complete kneading, rising, and baking (about 3 hours total).
  8. Remove the pan and turn the loaf out onto a wire rack to cool completely before slicing.
  9. Slice with a serrated bread knife and enjoy.

Notes

Use room temperature ingredients for best results. Pause the bread machine after the first knead cycle to add the cinnamon raisin swirl to create a distinct swirl. Soak raisins in warm water or rum for 10 minutes for extra softness. If dough is too sticky, add a tablespoon of extra flour. Cool loaf completely before slicing to avoid squishing.
