Ingredients

Scale
  • 1 bottle (750 ml) dry red wine (Tempranillo or Merlot)
  • 2 cups apple cider (unfiltered preferred)
  • 1/2 cup caramel sauce (plus extra for rim)
  • 1/4 cup apple brandy or Calvados
  • 2 tablespoons fresh lemon juice
  • 2 medium apples (1 Granny Smith, 1 Honeycrisp), thinly sliced
  • 1 orange, sliced into half-moons
  • 1/2 cup pomegranate arils
  • 23 cinnamon sticks
  • 1 star anise (optional)
  • Ice cubes (apple cider ice cubes recommended)
  • 1/4 cup crushed graham crackers or cinnamon sugar (for rim)

Instructions

  1. Prepare the caramel rim (optional): Pour 1/4 cup caramel sauce onto a small plate and spread crushed graham crackers or cinnamon sugar on another plate. Dip the rim of each glass into the caramel, then into the coating. Set aside to set.
  2. Mix the liquid base: In a large pitcher or punch bowl, combine the red wine, apple cider, 1/2 cup caramel sauce, apple brandy, and lemon juice. Stir until the caramel is fully dissolved.
  3. Add fruit and spices: Add the sliced apples, orange half-moons, pomegranate arils, cinnamon sticks, and star anise (if using). Stir gently.
  4. Chill: Cover and refrigerate for at least 2 hours, preferably 4-6 hours or overnight.
  5. Prepare ice: About an hour before serving, make apple cider ice cubes by freezing apple cider in an ice cube tray (or use regular ice).
  6. Serve: Fill caramel-rimmed glasses with ice cubes. Stir the sangria, then pour into glasses, ensuring each gets some fruit. Garnish with a cinnamon stick if desired.
  7. Keep it coming: Leave the pitcher on the table with extra ice. The sangria can be topped off with a splash of apple cider or wine as it gets low.

Notes

Don’t rush the chill time; the flavors need at least 2 hours to meld. Use a dry red wine to balance the sweetness. Slice apples thin for better absorption. For a non-alcoholic version, replace wine with additional apple cider and sparkling apple juice or ginger ale. Store leftovers in the refrigerator for up to 3 days; remove cinnamon sticks after 24 hours.
