  • 1 tablespoon fresh chives, finely chopped
  • 1 garlic clove, minced (optional)
  • Salt and pepper, to taste
  • Non-stick cooking spray or a little vegetable oil (to grease slow cooker)
  • Optional: a squeeze of fresh lemon juice in the herb butter

Instructions

  1. Peel and grate potatoes using a box grater or food processor. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture until mostly dry.
  2. In a large mixing bowl, combine grated potatoes, flour, baking powder, salt, and pepper. Add the beaten egg and stir gently until just combined. Adjust consistency with milk or flour if needed.
  3. In a small bowl, mix softened butter with chopped parsley, thyme, chives, minced garlic, salt, and pepper. Set aside at room temperature.
  4. Spray the slow cooker pot liberally with non-stick spray or rub a tablespoon of vegetable oil over the bottom and sides to prevent sticking.
  5. Form the potato batter into small dumplings about the size of a golf ball. Place them gently in a single layer inside the slow cooker, spacing slightly.
  6. Dot the top of the dumplings generously with herb butter. Cover and cook on low for 3 to 4 hours.
  7. After cooking, use a slotted spoon or tongs to transfer dumplings to plates. Spoon any melted herb butter from the slow cooker over top before serving.
