  • 6 bone-in, skin-on chicken thighs
  • 1/3 cup honey (raw or wildflower preferred)
  • 4 cloves garlic, minced or pressed
  • 1/4 cup soy sauce (low-sodium recommended)
  • 2 tablespoons apple cider vinegar
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 1.5 pounds Yukon Gold or red potatoes, cut into 1-inch chunks
  • Salt and pepper to taste
  • Pinch of dried thyme (optional)
  • Fresh herbs like parsley or thyme for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, pepper, and dried thyme if using. Spread on a baking sheet and roast for 35-40 minutes, turning halfway through, until golden and crispy.
  2. In a medium bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, and chicken broth to make the sauce.
  3. Pat chicken thighs dry with paper towels and season lightly with salt and pepper. Arrange skin-side down in the slow cooker.
  4. Pour the honey garlic sauce evenly over the chicken thighs without stirring.
  5. Cover and cook on low for 5-6 hours or on high for about 3 hours until chicken is tender and easily pulls apart with a fork.
  6. If desired, spoon some thickened sauce over the chicken before serving.
  7. Serve chicken thighs alongside the roasted potatoes and garnish with fresh parsley or thyme.

Notes

If the sauce is too thin after cooking, simmer it on the stove to thicken. Do not stir chicken while cooking to allow sauce to flavor the meat from the top down. For crispy skin, brown chicken thighs in a skillet before slow cooking or broil after cooking. Roasting potatoes separately keeps them crispy. Adjust cooking times if using chicken breasts. This recipe can be made gluten-free by using tamari or coconut aminos instead of soy sauce.
