Instructions

  1. Trim excess fat from the chuck roast and cut into 1-inch cubes. Season generously with salt and pepper.
  2. In a large skillet over medium heat, sauté chopped onions and minced garlic in a splash of oil until soft and fragrant, about 3-4 minutes.
  3. Add sliced mushrooms and cook until they release moisture and start to brown, about 6-7 minutes.
  4. Place the seasoned beef cubes in the slow cooker. Add the sautéed onions, garlic, and mushrooms on top.
  5. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir gently to combine without overmixing.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is tender and easy to shred.
  7. About 15 minutes before the stroganoff is ready, bring a large pot of salted water to a boil. Cook egg noodles according to package directions until al dente (6-8 minutes). Drain and toss with butter.
  8. In a small bowl, whisk together sour cream and flour until smooth. Stir this mixture into the slow cooker about 20 minutes before serving. Turn slow cooker to high and cook uncovered to thicken the sauce.
  9. Taste and adjust seasoning with salt and pepper. If sauce is too thick, add a splash of beef broth.
  10. Serve beef stroganoff over warm egg noodles and garnish with freshly chopped parsley if desired.
