  • 1 pound little smokies sausages
  • 12 slices thin-cut bacon
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon smoked paprika (optional)
  • Pinch of black pepper
  • Toothpicks (soaked in water for 10 minutes)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a rimmed baking sheet with parchment paper or foil.
  3. In a medium mixing bowl, combine little smokies, brown sugar, smoked paprika (if using), and black pepper. Stir until each smokie is evenly coated.
  4. Cut each bacon slice in half crosswise. Wrap one piece of bacon around each smokie and secure with a soaked toothpick.
  5. Arrange wrapped smokies on the prepared baking sheet, spacing them slightly apart.
  6. Bake for 25-30 minutes, flipping each smokie halfway through baking using tongs.
  7. Check for doneness: bacon should be crispy and brown sugar caramelized. Broil for 1-2 minutes if needed, watching closely to prevent burning.
  8. Let the smokies rest for a couple of minutes before serving.

Notes

Use thin-cut bacon for best crispness. Soak toothpicks in water to prevent burning. Flip smokies halfway through baking for even crisping. Avoid overcrowding the pan to keep bacon crispy. Optional: add cayenne pepper for heat or substitute brown sugar with maple syrup or honey for variation.
