Rustic Nectarine Galette with Creamy Almond Filling

A quick and easy rustic galette featuring juicy nectarines and a creamy almond filling, perfect for summer gatherings and weeknight treats.

  • 1 batch pie dough (about 9 inches in diameter, chilled)
  • 34 medium nectarines, ripe but firm, sliced about 1/4-inch thick
  • 3/4 cup almond meal/flour (about 75g)
  • 1/4 cup heavy cream (60 ml)
  • 2 tablespoons honey
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar
  • 1 egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C). Position a rack in the middle and line a baking sheet with parchment paper.
  2. In a medium bowl, combine almond meal, heavy cream, honey, softened butter, vanilla extract, and ground cinnamon if using. Mix until smooth and creamy, about 2 minutes.
  3. Roll out the pie dough on a lightly floured surface into a rough 12-inch circle about 1/8 inch thick.
  4. Spread the almond filling evenly over the dough, leaving a 2-inch border around the edges.
  5. Toss nectarine slices with lemon juice and arrange them in overlapping concentric circles over the almond filling.
  6. Fold the dough edges over the nectarines, pleating as needed. Brush the crust edges with the egg wash.
  7. Sprinkle granulated sugar lightly over the nectarines and crust edges.
  8. Bake the galette on the middle rack for 35-40 minutes until the crust is golden and the filling bubbles. Tent with foil if edges brown too fast.
  9. Transfer the galette to a cooling rack and let it rest for at least 15 minutes before slicing and serving.

Notes

Chill pie dough before rolling for a flakier crust. Use a rimmed baking sheet to catch drips. Tent with foil if crust edges brown too quickly. Let galette cool before slicing for cleaner cuts. Frozen nectarines can be used if thawed and patted dry. Substitute coconut cream and maple syrup for a vegan version.
