These Quick Red Velvet Crinkle Cookies are a smart shortcut to a classic treat, using a boxed cake mix for a soft, chewy cookie with a snowy powdered sugar coating. Ready in under 30 minutes, they’re perfect for weeknight cravings.

  • 1 box (15.25 oz) red velvet cake mix
  • 2 large eggs, at room temperature
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (confectioners’ sugar)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, oil, and vanilla. Stir with a spatula until a soft, cohesive dough forms. Do not overmix.
  3. Pour the powdered sugar into a shallow bowl. Using a cookie scoop or two spoons, portion out dough balls about 1.5 tablespoons each. Roll each ball between your palms until smooth.
  4. Roll each dough ball in the powdered sugar, coating generously. Place the coated balls on the prepared baking sheets, spacing them about 2 inches apart. You should get about 18-20 cookies.
  5. Bake for 9-11 minutes. The cookies will look puffy and slightly cracked on top. For softer cookies, bake for 9 minutes; for slightly crisper edges, go to 11 minutes.
  6. Let the cookies cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely. The crinkles will become more pronounced as they cool.

Notes

Don’t overbake; cookies continue to set on the hot pan. If dough is too sticky, chill for 15 minutes. Use fresh powdered sugar for best crinkle effect. For extra snowy tops, press a few extra bits of powdered sugar onto cookies right out of the oven.
