A quick and easy recipe for shrimp skewers marinated in a zesty cilantro lime glaze with a touch of honey and chili powder, perfect for busy weeknights or entertaining.

  • 1 pound raw shrimp, peeled and deveined, medium or large size
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 cup fresh lime juice (from about 2 medium limes)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before grilling)

Instructions

  1. Rinse 1 pound of raw shrimp under cold water and pat dry with paper towels.
  2. In a mixing bowl, whisk together 1/4 cup freshly squeezed lime juice, 2 tablespoons olive oil, 1 tablespoon honey, 2 minced garlic cloves, 1/4 cup finely chopped cilantro, 1/2 teaspoon chili powder, and salt and pepper to taste.
  3. Add the shrimp to the bowl and toss until evenly coated. Let them sit for 10-15 minutes at room temperature.
  4. Preheat the grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly oil the grill pan if using.
  5. Thread the shrimp onto skewers, leaving a little space between each shrimp (about 4-5 shrimp per skewer).
  6. Place skewers on the hot grill and cook for about 2-3 minutes per side until shrimp turn pink and opaque with some char marks.
  7. Brush extra marinade glaze onto the shrimp during the last minute of grilling for a sticky, zesty finish.
  8. Remove skewers from grill and let rest for 1-2 minutes. Garnish with extra chopped cilantro or lime wedges if desired. Serve immediately.

Notes

Do not marinate shrimp longer than 30 minutes to avoid texture changes. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Brush glaze during the last minute of grilling to avoid burning the honey. Medium-high heat is best to get a good sear without burning the glaze. Can substitute cilantro with parsley or basil. For vegan option, use tofu cubes marinated in the same glaze.
