Instructions

  1. In a medium bowl, toss the sliced strawberries, blueberries, and raspberries with 2 tablespoons sugar and 1 tablespoon lemon juice. Let sit for about 10 minutes to macerate.
  2. Slice the angel food cake into roughly 1-inch cubes, being gentle to keep cubes intact.
  3. In a chilled large bowl, whip the heavy cream, remaining 2 tablespoons sugar, vanilla extract, and lemon zest on medium-high speed until soft peaks form.
  4. Start layering the trifle in a clear bowl: place about one-third of the angel food cake cubes on the bottom.
  5. Spoon a generous layer of the macerated berries over the cake, allowing some juice to drizzle down.
  6. Add about one-third of the whipped cream over the berries.
  7. Repeat the layers: cake cubes, berries, and whipped cream.
  8. Finish with a top layer of berries for a vibrant red, white, and blue effect.
  9. Cover the trifle with plastic wrap and refrigerate for at least 2 hours, preferably 4 hours.
  10. Before serving, garnish with fresh mint leaves and optionally drizzle with berry liqueur or brandy.
