  • 1 ¾ cups (220g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 2 teaspoons baking powder
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 6 tablespoons (85g) unsalted butter, frozen
  • ½ cup (120g) pumpkin puree (not pumpkin pie filling)
  • ¼ cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • ¾ cup (90g) powdered sugar
  • 2 tablespoons pure maple syrup
  • 12 tablespoons heavy cream or milk
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, pumpkin pie spice, and salt.
  3. Grate frozen butter into the flour mixture using a box grater. Toss with a fork until butter pieces are pea-sized.
  4. In a small bowl, whisk together pumpkin puree, heavy cream, and vanilla extract until smooth.
  5. Make a well in the dry ingredients, pour in the pumpkin mixture, and stir gently with a fork until just combined. Do not overmix.
  6. Turn dough onto a lightly floured surface. Pat into a ¾-inch thick circle. Cut into 6 wedges.
  7. Place scones on prepared baking sheet, spacing 2 inches apart. Freeze for 10 minutes.
  8. Bake for 14-16 minutes, until edges are lightly golden and tops are set.
  9. Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  10. For the glaze: whisk together powdered sugar, maple syrup, and a pinch of salt. Add cream or milk 1 tablespoon at a time until thick but pourable.
  11. Drizzle glaze over warm scones. Serve warm or at room temperature.

Notes

Keep butter frozen until use. Do not overmix dough. Chill scones before baking for best rise. Glaze while warm for best texture.
