  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until browned all over (6-8 minutes). Leave about 1 tablespoon of fat in the pan.
  2. Sauté the aromatics: Add diced onion to the pan with the beef. Cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Bloom the spices: Sprinkle chili powder, cumin, smoked paprika, cayenne, salt, and pepper over the meat and onions. Stir and cook for 1 minute.
  4. Deglaze the pan: Pour in 1/2 cup of beef broth and scrape up browned bits from the bottom. Let bubble for 1 minute, then transfer everything to a 6-quart slow cooker.
  5. Add remaining chili ingredients: Add kidney beans, diced tomatoes (with juices), tomato sauce, remaining beef broth, brown sugar, and Worcestershire sauce. Stir to combine.
  6. Cook the chili: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Make the cornbread batter: About 30 minutes before serving, whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl. In a separate bowl, whisk buttermilk, egg, and melted butter. Pour wet into dry and stir until just combined (a few lumps are fine). Fold in cheddar if using.
  8. Add the cornbread topping: Uncover the slow cooker. Drop spoonfuls of batter evenly over the chili surface (8-10 dollops). Do not stir.
  9. Cook the cornbread: Cover and cook on HIGH for 30-40 minutes until golden brown and a toothpick inserted into a dollop comes out clean.
