  • 1/2 cup frosting (vanilla or cream cheese)
  • 12 ounces white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or vegetable shortening
  • Red and blue sprinkles or sanding sugar
  • Food-safe lollipop sticks or skewers
  • Optional: edible glitter or star-shaped confetti

Instructions

  1. Prepare the Cake Base: Bake the boxed cake mix according to package instructions and let cool completely, or crumble about 3 cups of leftover cake into a large bowl.
  2. Mix Cake and Frosting: Add 1/2 cup frosting to the cake crumbs and combine until sticky and moldable. Add more frosting by tablespoon if too dry.
  3. Shape Cake Balls: Use a cookie scoop or spoon to form 1 to 1.5-inch balls (about 24 pieces). Roll smooth and place on a parchment-lined baking sheet. Chill in fridge for at least 30 minutes.
  4. Melt White Chocolate: Combine white chocolate chips and 1 tablespoon coconut oil in a microwave-safe bowl. Microwave in 20-second bursts, stirring until smooth and glossy.
  5. Insert Sticks & Dip: Dip the tip of each lollipop stick into melted chocolate, then insert halfway into a cake ball. Dip each cake pop into white chocolate, covering completely, and tap off excess.
  6. Add Decorations: While coating is wet, sprinkle red and blue sprinkles or sanding sugar. Optionally drizzle extra chocolate or add edible glitter. Place upright on styrofoam block or parchment to dry.
