  • 1 teaspoon salt
  • 1 teaspoon malt powder (optional)
  • 10 cups water, for boiling
  • ½ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water
  • Coarse pretzel salt or flaky sea salt
  • 2 tablespoons unsalted butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • 1 cup whole milk
  • ½ cup beer (ale or lager)
  • 2 cups sharp cheddar cheese, shredded (about 8 oz)
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In the bowl of a stand mixer, combine warm water, yeast, and brown sugar. Let sit 5–7 minutes until frothy.
  2. Make the dough: Add melted butter, flour, salt, and malt powder. Mix on low until shaggy, then knead on medium for 5–6 minutes until smooth and tacky.
  3. First rise: Shape dough into a ball, place in a greased bowl, cover, and let rise 45–60 minutes until doubled.
  4. Shape the bites: Punch down dough, divide into 4 pieces. Roll each into a 12-inch rope, cut into 1-inch pieces (about 64–72 total). Place on parchment-lined baking sheet.
  5. Prepare baking soda bath: Preheat oven to 425°F. Bring 10 cups water to a boil, slowly add ½ cup baking soda. Stir until dissolved.
  6. Boil the bites: Working in batches, boil bites for 45 seconds per side. Transfer back to baking sheet.
  7. Egg wash and salt: Brush bites with egg wash, sprinkle with coarse salt.
  8. Bake: Bake 12–15 minutes until deep golden brown, rotating halfway. Cool 5 minutes.
  9. Make beer cheese dip: In a saucepan, melt butter, whisk in flour, cook 1 minute. Slowly whisk in milk and beer, simmer until thickened. Reduce heat, add cheddar, mustard, garlic powder, salt, and pepper. Stir until smooth. Keep warm.

Notes

Do not skip the boiling step; it gives the pretzels their signature crust. Use a slotted spoon to handle the bites. Keep the beer cheese dip warm; if it thickens, whisk in a splash of milk. For a darker crust, add 1 teaspoon brown sugar to the boiling water.
