  • 1 medium zucchini, shredded (about 1 cup, drained well)
  • 3/4 cup semi-sweet chocolate chips
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. In a large bowl, mash the bananas until mostly smooth. Add vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Mix until fully combined.
  5. Fold the shredded zucchini into the wet mixture.
  6. Gently add the dry ingredients to the wet mixture, folding until just combined. Avoid overmixing.
  7. Stir in the chocolate chips, reserving a handful to sprinkle on top if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle reserved chocolate chips on top if using.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 60 minutes.
  10. Cool the bread in the pan for 10-15 minutes, then transfer to a cooling rack and let cool completely before slicing.

Drain zucchini thoroughly to avoid sogginess. Avoid overmixing the batter to keep bread tender. Use ripe bananas for natural sweetness. Toss chocolate chips in flour before adding to batter to prevent sinking. Test doneness by toothpick and slight spring back when pressed.
