  • 1 (15-ounce) can black beans, rinsed and drained
  • 12 jalapeños, sliced fresh or pickled
  • 1/2 medium onion, finely chopped
  • 1 medium tomato, diced
  • 3 green onions, sliced thin
  • Fresh cilantro, chopped (optional)
  • Sour cream, for dolloping
  • Guacamole or sliced avocado, for serving
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown 1 pound of ground beef or turkey. Drain excess fat.
  3. Stir in chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook for another 2 minutes to let spices bloom. Set aside.
  4. Rinse and drain black beans. Dice tomato, finely chop onion, slice jalapeños and green onions. Grate cheeses.
  5. Spread a single layer of tortilla chips on a baking sheet.
  6. Evenly distribute half the cooked meat, black beans, onions, and jalapeños over the chips.
  7. Sprinkle half the cheese blend on top.
  8. Add another layer of chips and repeat the toppings and cheese layers.
  9. Bake in the oven for 10-12 minutes until cheese is melted and bubbly. Watch closely to avoid burning.
  10. Remove from oven and immediately top with diced tomatoes, sliced green onions, and fresh cilantro if using.
  11. Add dollops of sour cream and guacamole or sliced avocados on the side or directly on top.
