Light Chili-Lime Salmon Bowls: Easy 20-Minute Dinner

Quick and healthy salmon bowls with a chili-lime glaze, creamy sauce, and fresh toppings. Ready in 20 minutes for a perfect weeknight dinner.

  • 4 salmon fillets (6 oz / 170 g each), skin-on or skinless
  • 1 teaspoon chili flakes
  • Zest from 2 limes
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 2 avocados, sliced
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup chopped cilantro
  • 1 cup shredded red cabbage
  • Lime wedges for serving
  • 1/2 cup Greek yogurt (or dairy-free coconut yogurt)
  • 1 tablespoon lime juice (for sauce)
  • 1/2 teaspoon chili flakes (for sauce)
  • 1 teaspoon honey (or maple syrup)
  • Pinch of salt (for sauce)

Instructions

  1. Start your rice first. If using a rice cooker, set it and forget it. For stovetop, bring 2 cups water and 1 cup rice to a boil, then simmer covered for 18 minutes. Fluff with a fork when done. If using leftover rice, microwave for 1-2 minutes before serving.
  2. Make the chili-lime seasoning. In a small bowl, combine 1 teaspoon chili flakes, zest from 2 limes, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
  3. Season the salmon. Pat the fillets dry with paper towels. Rub each fillet with 1/2 tablespoon olive oil, then sprinkle the chili-lime seasoning evenly over both sides.
  4. Heat your skillet over medium-high heat for 2 minutes. Add 1 tablespoon olive oil and swirl to coat. The oil should shimmer but not smoke.
  5. Sear the salmon. Place the fillets skin-side down (if using skin-on) in the hot skillet. Press gently with a spatula for 5 seconds. Cook for 4 minutes without moving them.
  6. Flip and finish. Carefully flip the fillets using a thin spatula. Cook for another 3-4 minutes for medium doneness (center slightly translucent). For well-done, cook 5-6 minutes total on the second side.
  7. Add the lime juice. In the last minute of cooking, drizzle 2 tablespoons fresh lime juice over the salmon. Let it sizzle and reduce slightly. Remove from heat and let rest for 2 minutes.
  8. Make the sauce. While the salmon rests, whisk together 1/2 cup Greek yogurt, 1 tablespoon lime juice, 1/2 teaspoon chili flakes, 1 teaspoon honey, and a pinch of salt in a small bowl. Taste and adjust.
  9. Assemble the bowls. Divide the rice among 4 bowls. Top with black beans, corn, shredded cabbage, and sliced avocado. Flake the salmon into large chunks and place on top. Drizzle with the creamy chili-lime sauce and sprinkle with chopped cilantro. Serve with lime wedges on the side.

Notes

Pat salmon dry for a good sear. Don’t overcrowd the pan; cook in batches if needed. Let salmon rest 2 minutes after cooking. Store components separately for meal prep. Salmon keeps 3 days in fridge; rice and beans up to 5 days. Sauce stays good 4 days in sealed container.
