A bold, punchy, vinegar-based tonic that boosts immunity with simple ingredients like fresh ginger, turmeric, horseradish, garlic, and raw apple cider vinegar. Easy to make and customize, it’s a practical old-school remedy that tastes great.

  • 4 cups (960 ml) raw apple cider vinegar (with the mother)
  • 1 large (about 4 inches) fresh ginger root, unpeeled and thinly sliced
  • 1 medium (about 3 inches) fresh turmeric root, unpeeled and thinly sliced
  • 1 small (about 2 inches) fresh horseradish root, peeled and grated or thinly sliced
  • 810 garlic cloves, smashed
  • 1 medium yellow onion, roughly chopped
  • 1 small fresh jalapeño or serrano pepper, sliced (seeds in for heat, out for milder)
  • 1 medium lemon, thinly sliced (rind on)
  • 23 sprigs fresh rosemary
  • 45 sprigs fresh thyme
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon cayenne pepper (or 1 small dried cayenne pod)
  • 1/4 cup (85 grams) raw honey, or more to taste

Instructions

  1. Wash all fresh ingredients thoroughly. Do not peel ginger or turmeric—just scrub well. Thinly slice ginger, turmeric, horseradish, lemon, and chili. Smash garlic cloves with flat side of knife. Roughly chop onion.
  2. Layer ingredients in a 1-quart glass jar: start with harder roots (ginger, turmeric, horseradish) at bottom. Add garlic, onion, chili slices, and lemon slices on top. Tuck in rosemary and thyme sprigs along sides. Sprinkle in black peppercorns and cayenne.
  3. Place jar on a towel. Slowly pour raw apple cider vinegar over ingredients until completely submerged, leaving about 1/2 inch headspace. Use a chopstick or butter knife to release air bubbles.
  4. Screw lid on tightly. Shake jar for 10-15 seconds.
  5. Store jar in a cool, dark place (pantry or cupboard) for 3-4 weeks. Shake daily for first week, then every few days. Taste at 3-week mark; steep longer if stronger flavor desired.
  6. Once desired strength is reached, strain tonic through a fine-mesh strainer lined with cheesecloth into a large bowl or measuring cup. Press solids with a spatula to extract all liquid.
  7. Stir in raw honey while vinegar is at room temperature. Start with 1/4 cup and adjust to taste. Use a funnel to pour into dark glass bottles or clean swing-top jars.
  8. Label with date. Store in refrigerator for up to 6 months.

Notes

Shake jar daily for first week to ensure even flavor infusion. Use raw apple cider vinegar with the mother for best probiotic benefits. For milder heat, remove seeds from chili or use jalapeño instead of serrano. Add extra cayenne at bottling to adjust heat. Room temperature honey blends more easily. Store in refrigerator; flavor improves after first month.
