  • 1 cup (240 g) pumpkin purée
  • ½ cup (120 g) plain Greek yogurt (full-fat or 2%)
  • ⅓ cup (110 g) honey or maple syrup
  • ¼ cup (50 g) coconut sugar or brown sugar
  • 2 large eggs, room temperature
  • 1 ½ cups (190 g) whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup (60 ml) coconut oil or melted butter, cooled

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a larger bowl, whisk the eggs until light and frothy, about 30 seconds. Add the pumpkin purée, Greek yogurt, honey or maple syrup, coconut sugar or brown sugar, melted coconut oil or butter, and vanilla extract. Whisk until smooth and well combined.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold gently until just combined—a few lumps are fine. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread evenly. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil after 40 minutes.
  6. Let the bread cool in the pan for 10-15 minutes, then lift it out using the parchment overhang and transfer to a cooling rack. Cool completely before slicing, at least 1 hour.

Room temperature ingredients matter for best texture. Do not overmix the batter. Let the bread cool completely before slicing to avoid crumbling. For a gluten-free option, use a 1:1 gluten-free baking blend with xanthan gum. For dairy-free, use dairy-free Greek yogurt and coconut oil.
