  3. First rise: Shape dough into a ball, place in a lightly greased bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Preheat oven to 450°F (232°C). Prepare soda bath: In a large pot, bring 10 cups (2.4 liters) of water and 1/4 cup (60g) baking soda to a boil.
  5. Shape pretzels: Punch down dough and divide into 8 equal pieces. Roll each into a 20-inch rope. Form each rope into a classic pretzel shape.
  6. Boil pretzels: Using a slotted spoon, lower each pretzel into the boiling baking soda bath for 30 seconds. Remove and place on prepared baking sheet.
