  • 6 cups Rice Krispies cereal (about 180 grams)
  • 1 to 2 packs Pop Rocks candy (14 to 28 grams total)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Lightly grease a 9×13-inch baking dish with butter or non-stick spray and set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter, about 2 minutes.
  3. Add 6 cups of mini marshmallows to the melted butter and stir constantly until fully melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 teaspoon of vanilla extract if using.
  5. Quickly add 6 cups of Rice Krispies cereal and stir gently but thoroughly until evenly coated.
  6. Pour the mixture into the prepared pan and press evenly and firmly using a buttered spatula or lightly buttered hands.
  7. Let the treats cool completely at room temperature for at least 30 minutes.
  8. Once set and firm, sprinkle 1 to 2 packs of Pop Rocks candy evenly over the top and gently press to stick. Do not mix in.
  9. Cut into squares or fun shapes with a buttered knife and serve immediately for the best popping experience.

Add Pop Rocks only after the treats have fully cooled and set to preserve the popping effect. Use mini marshmallows for smoother melting. Press the mixture gently to keep the crispy texture. Use a buttered knife to cut for neat edges. Store treats at room temperature in an airtight container and add fresh Pop Rocks before serving leftovers.
