A light, refreshing, and easy-to-make summer appetizer combining sweet watermelon, salty feta, fresh mint, and a spicy tang from Tajín and lime zest. Perfect for quick gatherings and crowd-pleasing snacks.

  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 1 cup feta cheese, cut into 1-inch cubes
  • 20 fresh mint leaves, whole and washed
  • 2 teaspoons Tajín seasoning
  • Zest of 1 medium lime
  • 1 tablespoon fresh lime juice (optional)
  • 2025 wooden or bamboo skewers, about 4 inches long

Instructions

  1. Cut the watermelon into 1-inch cubes, removing any seeds if needed. Cut feta into cubes roughly the same size.
  2. Gently rinse the mint leaves and pat dry with a towel.
  3. Use a microplane or fine grater to zest one lime, avoiding the bitter white pith. Set zest aside.
  4. Optional: Place watermelon cubes in a mixing bowl, drizzle with about 1 tablespoon of fresh lime juice, and toss lightly.
  5. Assemble the skewers by threading one watermelon cube, followed by a mint leaf (folded if large), then a feta cube. Repeat if skewers are long enough or keep simple with one of each.
  6. Arrange the skewers on a serving platter. Sprinkle 2 teaspoons of Tajín seasoning evenly over all skewers and finish with a sprinkle of fresh lime zest.
  7. Serve immediately or chill briefly in the refrigerator for up to 1 hour before serving.

Notes

Do not add Tajín too early if refrigerating skewers to prevent dampening the spice. Use firm, ripe watermelon for best texture. Fold or tear large mint leaves to balance flavor. For vegan option, substitute feta with marinated tofu or plant-based cheese. Store leftovers covered in fridge up to 24 hours with paper towel underneath to absorb moisture.
