Instructions

  1. Preheat your oven to 375°F (190°C) and lightly butter or grease a 9×9-inch baking dish.
  2. Peel, pit, and slice about 5 large ripe peaches into roughly 1/2-inch thick slices. Place them in a large mixing bowl.
  3. Sprinkle 1/2 cup granulated sugar, 1 tablespoon fresh lemon juice, and 1 tablespoon cornstarch over the peaches. Gently toss to coat thoroughly.
  4. Transfer the peaches and their juices evenly into the prepared baking dish.
  5. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cardamom.
  6. Add 6 tablespoons cold, cubed unsalted butter to the flour mixture. Use a pastry cutter, two knives, or your fingertips to mix until the mixture resembles coarse crumbs with pea-sized bits of butter.
  7. Stir in 3/4 cup whole milk (or buttermilk) and 1 teaspoon vanilla extract until just combined. Avoid overmixing.
