  • 34 ripe peaches, sliced thin
  • 8 ounces burrata cheese, fresh and soft
  • 4 cups baby arugula or mixed greens, washed and dried
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly cracked black pepper, to taste
  • A handful of fresh basil leaves, torn
  • Optional: 1/4 cup toasted pine nuts or walnuts

Instructions

  1. Prepare the glaze: In a small saucepan, combine 3 tablespoons balsamic vinegar and 2 tablespoons honey. Heat over medium-low, stirring frequently, until reduced by half and syrupy, about 8-10 minutes. Set aside to cool slightly.
  2. Slice the peaches: Rinse and dry peaches. Using a sharp knife, cut into thin wedges about 1/4 inch thick, handling gently if very ripe.
  3. Prepare the greens: Wash and dry 4 cups baby arugula or mixed greens thoroughly.
  4. Assemble the salad base: Place greens in a large bowl or serving platter. Arrange peach slices evenly over the greens.
  5. Add burrata: Tear burrata into large chunks and scatter over peaches and greens.
  6. Drizzle olive oil: Pour 2 tablespoons extra-virgin olive oil over the salad.
  7. Season: Lightly sprinkle salt and freshly cracked black pepper over the salad.
  8. Finish with glaze and basil: Drizzle honey balsamic glaze evenly over the salad and scatter torn fresh basil leaves on top.
  9. Optional crunch: Sprinkle toasted pine nuts or walnuts if using.
  10. Serve immediately for best freshness.

Make the honey balsamic glaze a day ahead and store in the fridge; warm slightly before use. Use ripe peaches for best flavor and texture. Burrata should be at room temperature for creaminess.
