A quick and easy frozen yogurt bark featuring creamy Greek yogurt and fresh berries, perfect for a light, refreshing summer treat with patriotic red, white, and blue colors.

  • 2 cups (480 ml) plain Greek yogurt (full-fat recommended)
  • 2 tablespoons (30 ml) honey or maple syrup
  • 1 cup (150 g) fresh strawberries, chopped
  • 1 cup (150 g) fresh blueberries
  • 1 teaspoon (5 ml) vanilla extract (optional)

Instructions

  1. In a large bowl, combine 2 cups (480 ml) of plain Greek yogurt with 2 tablespoons (30 ml) of honey or maple syrup and 1 teaspoon (5 ml) of vanilla extract. Stir well until smooth and slightly glossy.
  2. Line a rimmed baking sheet (about 9×13 inches or 23×33 cm) with parchment paper, leaving some overhang for easy removal.
  3. Pour the yogurt mixture onto the lined tray and spread evenly with a spatula to about 1/4 inch (0.6 cm) thickness.
  4. Scatter 1 cup (150 g) chopped fresh strawberries and 1 cup (150 g) fresh blueberries evenly over the yogurt. Gently press them into the yogurt so they stick but remain visible on top.
  5. Place the tray in the freezer and freeze for at least 4 hours or overnight until solid.
  6. Remove the frozen bark by lifting the parchment paper and break or cut into pieces using a sharp knife. Serve immediately or store for later.

Notes

Use thick Greek yogurt to avoid icy texture. Sweeten just right with honey or maple syrup to balance tartness. Freeze on a flat surface and freeze overnight for best results. Store in an airtight container layered with parchment paper to prevent sticking. If yogurt is too runny, drain through cheesecloth for 30 minutes before mixing. Wet spatula with cold water to spread yogurt smoothly.
