A quick and refreshing summer snack featuring a vibrant mix of fresh fruits tossed in a honey lime mint dressing. Perfect for a light, healthy treat or a bright side dish.

  • 2 cups fresh strawberries, hulled and quartered
  • 2 cups fresh pineapple chunks
  • 2 cups seedless green grapes, halved
  • 2 kiwis, peeled and sliced
  • 1 medium mango, diced (optional)
  • 3 tablespoons honey
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 tablespoon finely chopped fresh mint leaves
  • 1 teaspoon lime zest (optional)

Instructions

  1. Rinse all fruit under cold water. Hull and quarter strawberries; peel and dice the mango and kiwi; halve the grapes; cut pineapple into bite-sized chunks. Place all fruit into a large mixing bowl. (Approx. 15 minutes)
  2. In a small bowl or jar, combine honey, freshly squeezed lime juice, finely chopped mint leaves, and lime zest if using. Whisk or shake well until honey is fully mixed with the lime juice and the mint is evenly distributed. (Approx. 5 minutes)
  3. Pour the honey lime mint dressing over the fruit. Gently toss using two large spoons or salad tongs to coat all the fruit evenly. Be careful not to mash the softer fruits like kiwi or mango. You want everything glistening but intact. (Approx. 3 minutes)
  4. For best flavor, let the salad rest in the fridge for at least 15 minutes to allow the flavors to meld. Serve cold or slightly chilled. (Optional resting time: 15-30 minutes)

Notes

Use ripe but firm fruit to avoid mushiness. Chop fruit uniformly for even flavor and appearance. Finely chop fresh mint to avoid overpowering large leaves. Adjust honey and lime juice balance to taste. Prepare dressing and fruit ahead and toss just before serving for freshness. Store leftovers in airtight container in fridge up to 2 days; stir gently before serving again. Avoid freezing.
