Fresh Garlic Scape and White Bean Hummus

A bright, creamy dip with a subtle garlicky punch made from fresh garlic scapes and white beans, offering a fresh twist on classic hummus that’s quick and easy to prepare.

Ingredients

  • 1 ½ cups cooked or canned cannellini or great northern beans, rinsed and drained
  • 34 medium garlic scapes, chopped
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons tahini
  • ½ teaspoon ground cumin
  • ½ teaspoon sea salt, or to taste
  • 24 tablespoons water, to thin as needed
  • Optional garnish: smoked paprika, chopped fresh parsley, or a drizzle of olive oil

Instructions

  1. Rinse and drain the white beans thoroughly to remove excess sodium if using canned. Chop the garlic scapes into 1-inch pieces.
  2. Add white beans, chopped garlic scapes, tahini, lemon juice, ground cumin, and sea salt to the bowl of your food processor.
  3. Pulse the mixture 3-4 times to break down the beans and garlic scapes.
  4. With the processor running on low speed, drizzle in the olive oil to emulsify the mixture.
  5. If the hummus feels too thick, add water one tablespoon at a time, blending after each addition until smooth and spreadable.
  6. Taste and adjust seasoning with more salt, lemon juice, or cumin if desired.
  7. Spoon the hummus into a serving bowl and garnish with a drizzle of olive oil, smoked paprika, and fresh parsley.

Notes

Letting the hummus rest for 30 minutes in the fridge helps flavors meld. Add water slowly to avoid a runny dip. Use good-quality tahini for best flavor. Garlic scapes can be substituted with garlic cloves but will be stronger. Store leftovers in an airtight container in the fridge for up to 4 days. Freezes well for up to 3 months.
