Instructions

  1. Trim the rind off the watermelon and cut into roughly 1-inch cubes.
  2. Rinse and dry fresh mint leaves, then finely chop or tear into small pieces.
  3. In a large mixing bowl, gently toss the watermelon cubes with crumbled feta and chopped mint.
  4. In a small bowl or measuring cup, whisk together balsamic glaze, extra virgin olive oil, black pepper, and sea salt.
  5. Drizzle the dressing evenly over the salad and toss lightly to coat without breaking down the watermelon.
  6. Give everything a gentle stir, taste, and adjust seasoning if needed. Garnish with whole mint leaves if desired.
  7. Serve immediately or chill for up to one hour before serving, tossing gently again before plating.

Use ripe, seedless watermelon for best sweetness and ease. Crumble feta into chunks rather than dust for texture. Drizzle balsamic glaze just before serving to avoid sogginess.
