Instructions

  1. Make the waffle batter: In a medium bowl, whisk together 1 cup (120g) all-purpose flour, 1 1/2 tsp baking powder, 2 tbsp sugar, and 1/4 tsp salt. In another bowl, beat 1 large egg with 3/4 cup (180ml) milk, 4 tbsp melted unsalted butter, and 1 tsp vanilla extract.
  2. Combine wet and dry ingredients: Pour the wet mixture into the dry and whisk gently until just combined. The batter should be slightly lumpy—don’t overmix or waffles get tough. Let it rest for 5 minutes while you prep the fruit.
  3. Prepare the fruit and cheese: Rinse and slice strawberries, kiwi, and grapes; segment mandarins; keep blueberries whole. Cut the cheeses into bite-sized chunks or slices. Arrange them on a plate or board ready to assemble.
  4. Cook the mini waffles: Preheat your mini waffle maker. Spoon about 2 tbsp batter per waffle, close the lid, and cook for 3-4 minutes or until golden brown and crisp. Transfer to a cooling rack to keep them from steaming and getting soggy.
