Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt. (5 minutes)
  2. Combine wet ingredients: In a separate bowl, beat the egg with the milk, melted butter, and vanilla extract until smooth. (3 minutes)
  3. Make the cinnamon swirl: In a small bowl, combine melted butter, brown sugar, and cinnamon until well mixed and glossy. (3 minutes)
  4. Combine wet and dry: Pour the wet ingredients into the dry and gently fold with a spatula until just combined. The batter should be thick but pourable. (4 minutes)
  5. Add the cinnamon swirl: Transfer the cinnamon mixture to a small piping bag or zip-top bag with a tiny corner cut off. Spoon half the batter into the skillet in small rounds (~¼ cup or 60ml each). Pipe a spiral of cinnamon mixture onto each pancake and then top with remaining batter to cover the swirl. (10 minutes)

  7. Prepare the cream cheese glaze: While pancakes cook, beat softened cream cheese with powdered sugar, milk, and vanilla until smooth and pourable. Add more milk if needed to reach drizzling consistency. (5 minutes)
