  • 2 ½ cups bread flour (315 g)
  • ½ cup all-purpose flour (60 g)
  • 2 ¼ tsp instant yeast (7 g)
  • 2 tbsp sugar (25 g)
  • 1 ½ tsp salt (9 g)
  • 1 cup whole milk, warmed slightly (240 ml)
  • 2 tbsp unsalted butter, softened (28 g)
  • 1 large egg, room temperature
  • Optional: 1 tbsp vital wheat gluten (8 g)

Instructions

  1. Warm the milk gently to about 100°F (38°C). Soften butter to room temperature and ensure the egg is at room temperature.
  2. Pour the warm milk into the bread machine pan, then add softened butter and egg.
  3. Add bread flour and all-purpose flour evenly over the liquid.
  4. Sprinkle sugar and salt in separate corners of the pan to keep them apart from the yeast.
  5. Make a small well in the center of the flour (avoid reaching the liquid) and add the instant yeast there.
  6. Select the ‘Basic’ or ‘White Bread’ cycle on your bread machine, about 2 hours and 50 minutes. Choose ‘Light’ or ‘Medium’ crust setting.
  7. After 5-10 minutes of kneading, check dough consistency. If too wet, add flour a tablespoon at a time; if too dry, add water or milk a teaspoon at a time.
  8. Close the lid and let the machine knead, rise, and bake the bread.
  9. When baking finishes, use oven mitts to remove the bread pan and turn the loaf onto a cooling rack.
  10. Let the bread cool for 15-20 minutes before slicing.

Warm milk to about 100°F to activate yeast without killing it. Check dough consistency early during kneading and adjust flour or liquid as needed. Let bread cool before slicing to avoid gummy texture. Store wrapped in a clean kitchen towel or paper bag at room temperature for 2-3 days or freeze for longer storage.
