  • 4 tablespoons (60g) unsalted butter, softened
  • 2 tablespoons (30ml) honey (mild, runny such as clover or wildflower)
  • Pinch of fine sea salt, to taste
  • Freshly cracked black pepper, a dash
  • Optional: smoked paprika
  • Optional: fresh lime juice
  • Optional: chopped fresh herbs like parsley or chives

Instructions

  1. Remove the husks and silk from each ear of corn. Rinse under cold water and pat dry with a towel. (5 minutes)
  2. In a small bowl, mix softened unsalted butter, honey, a pinch of salt, and freshly cracked black pepper until smooth and well combined. (3 minutes)
  3. Preheat grill to medium-high heat, about 375°F (190°C). If using charcoal, wait until coals are glowing red with a thin layer of ash. (10 minutes)
  4. Place corn directly on grill grates. Cook for 10-12 minutes, turning every 2-3 minutes with tongs for even charring. Look for light blackened spots and smoky aroma. (12 minutes)
  5. During the last 3-4 minutes of grilling, brush honey butter mixture generously over the corn. Flip and baste again to create a sticky, caramelized coating. Watch closely to avoid burning sugars. (4 minutes)
  6. Remove corn from grill and let rest for 1-2 minutes to allow glaze to set. Optionally sprinkle with smoked paprika, fresh lime juice, or herbs before serving. (2 minutes)

Notes

Apply honey butter glaze during the last few minutes of grilling to prevent burning. Turn corn frequently for even cooking and to keep kernels juicy. Softened butter blends better with honey for easy basting. For dairy-free or vegan option, substitute butter with plant-based spread and honey with maple syrup.
