Flavorful Grilled Garlic Butter Shrimp Foil Packets

A quick and easy grilled shrimp recipe featuring garlic butter and fresh lemon, perfect for BBQ meals with minimal cleanup and maximum flavor.

  • pounds large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 medium lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your grill to medium-high heat, around 375°F (190°C).
  2. In a medium bowl, combine softened butter, minced garlic, lemon zest, smoked paprika, red pepper flakes, salt, and pepper. Mix until well blended.
  3. Add shrimp to the bowl and drizzle with olive oil and lemon juice. Toss gently to coat evenly. Marinate for 10-15 minutes if time allows.
  4. Tear off four large squares of heavy-duty foil, about 12×12 inches each. Divide shrimp evenly among the squares.
  5. Sprinkle chopped parsley over the shrimp in each packet. Fold foil over shrimp and crimp edges tightly to seal packets.
  6. Place foil packets on the preheated grill. Cook for 6-8 minutes, then carefully flip packets and grill for another 4-6 minutes until shrimp are pink and opaque.
  7. Remove packets from grill and let rest for a minute before opening. Squeeze fresh lemon over shrimp and serve immediately.

Notes

Use heavy-duty foil to prevent tearing. Do not overcook shrimp to avoid rubbery texture. Marinating shrimp for 10-15 minutes enhances flavor. If no grill is available, bake at 400°F for 12-15 minutes or broil for 6-8 minutes. For dairy-free, substitute butter with vegan margarine or coconut oil.
