  • 1 teaspoon chipotle powder

  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh cilantro, chopped (optional)

Instructions

  1. Prepare the Chipotle Lime Butter: In a mixing bowl, combine 4 tablespoons softened unsalted butter with 1 teaspoon chipotle powder, 1 tablespoon fresh lime juice, 1 teaspoon lime zest, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Mix thoroughly until smooth and well incorporated. Set aside.
  2. Preheat the Grill: Heat your grill to medium-high (about 400°F or 200°C). If using charcoal, wait until coals are glowing with a light layer of ash.
  3. Prepare the Corn: Husk the corn and remove all silk strands. Rinse under cold water and pat dry. Optionally soak ears in cold water for 10 minutes for added moisture during grilling.
  4. Grill the Corn: Place the corn directly on the grill grates. Turn every 3-4 minutes using tongs to get even char marks on all sides. Grill for about 15 minutes until golden brown with slight blackened spots.
  5. Apply the Chipotle Lime Butter: Remove the corn from the heat and generously slather the chipotle lime butter over each ear while still hot.
  6. Garnish and Serve: Sprinkle chopped fresh cilantro over the corn if desired. Serve immediately for best flavor and texture.

Notes

Use softened butter for better blending and adherence to corn. Turn corn regularly on grill to ensure even cooking and prevent burning. Chipotle powder can be adjusted for heat preference. Butter can be made ahead and refrigerated; bring to room temperature before use. For no grill, roast corn in oven at 425°F for 20-25 minutes, broil last 3-5 minutes for char.
