These easy patriotic icebox cookies feature vibrant red, white, and blue stripes perfect for Fourth of July celebrations. The buttery dough is simple to prepare, chill, slice, and bake for a festive treat.

  • 1 cup (227 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups (312 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Red gel food coloring
  • Blue gel food coloring

Instructions

  1. Cream butter and sugar in a large bowl using an electric mixer on medium speed until pale and fluffy, about 3-4 minutes.
  2. Mix in vanilla extract until combined.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to the butter mixture and combine until a soft dough forms.
  5. Divide dough into three equal portions.
  6. Leave one portion plain (white). Add red gel food coloring to one portion and blue gel to the other, kneading gently until colors are even.
  7. Roll each colored dough into a cylinder about 2 inches in diameter and 8 inches long.
  8. Place the three logs side by side and press together lengthwise, then wrap tightly in plastic wrap to form a single log.
  9. Chill the log in the refrigerator for at least 4 hours or overnight.
  10. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone mats.
  11. Slice chilled dough into 1/4 inch thick rounds and place 2 inches apart on baking sheets.
  12. Bake for 10-12 minutes until edges start to turn golden.
  13. Cool cookies on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill dough well to prevent colors from bleeding and cookies from spreading too much. Use gel food coloring for vibrant colors without affecting dough consistency. If dough softens while slicing, chill again for 10-15 minutes. Use a sharp, thin-bladed knife warmed slightly under hot water for clean slices.
