  • 1/2 cup (100 g) Pop Rocks candy (flavor matching gelatin, e.g., cherry or watermelon)
  • Juice of 1 lime or lemon (for wetting the rim)
  • Coarse sugar (optional, to mix with Pop Rocks for extra sparkle)

Instructions

  1. Pour 1 cup (240 ml) of boiling water into a heatproof bowl. Sprinkle the entire gelatin packet over the surface and stir gently for about 2 minutes until completely dissolved.
  2. Stir in 1/2 cup (120 ml) cold water followed by 1/2 cup (120 ml) vodka or your chosen liquor. Mix well to combine until smooth and slightly glossy.
  3. Pour Pop Rocks onto a shallow plate. Optionally, mix with a teaspoon of coarse sugar.
  4. On another plate, squeeze the lime or lemon juice.
  5. Dip the rim of each shot glass into the citrus juice, rotating to coat evenly but not dripping. Immediately dip the rim into the Pop Rocks mixture, twisting to cover fully. Set aside to dry for a few minutes.
  6. Carefully pour the gelatin mixture into each rimmed shot glass, filling about 3/4 full. Leave room so the Pop Rocks rim stays crisp.
  7. Place the filled shots in the refrigerator and chill for at least 2 hours, or until fully set and firm to the touch.
  8. Before serving, let the shots sit at room temperature for about 10 minutes to soften the gel slightly and enhance mouthfeel.
