  • 12 small packets (approx. 0.1 oz each) Pop Rocks candy, classic fruity flavors like cherry or watermelon
  • Sprinkles or edible glitter (optional)
  • Pinch of sea salt flakes
  • Optional: chopped nuts or dried fruit for texture variation

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat. Open Pop Rocks packets and have them ready for quick use.
  2. Melt the semi-sweet chocolate in a microwave-safe bowl in 20-second intervals, stirring well each time until smooth and glossy (about 2 minutes total), or melt over a double boiler on low heat.
  3. Pour the melted semi-sweet chocolate onto the prepared sheet and spread into an even layer about 1/4 inch (0.6 cm) thick using a spatula.
  4. Melt the white chocolate using the same method until smooth. Drizzle or dollop it over the dark chocolate base and gently swirl with a knife or toothpick to create marbled patterns.
  5. Immediately sprinkle the Pop Rocks evenly over the top of the chocolate before it sets to preserve their popping effect.
  6. Optionally add a pinch of sea salt flakes and colorful sprinkles or edible glitter for extra festive flair.
  7. Place the tray in the refrigerator for 20-30 minutes or until the chocolate is fully hardened and snaps easily when broken.
  8. Break the bark into irregular chunks using your hands or a knife. Serve immediately or store in an airtight container.

Notes

Add Pop Rocks only after the chocolate is off the heat and still warm to preserve the popping effect. Use a silicone mat to prevent sticking. Store in an airtight container at room temperature for up to two weeks or refrigerate if warm. Bring to room temperature before serving to maximize flavor and popping sensation. Avoid freezing. For vegan option, use vegan chocolate and vegan-friendly popping candy.
