These Easy Turkey Cheese Pinwheel Lunchbox Bites are a fun, sturdy, and delicious solution to sad, soggy lunches. Made with a creamy herbed spread, savory turkey, and melty cheese wrapped in a soft tortilla, they’re perfect for meal prep and get better after chilling.

  • 4 large flour tortillas (10-inch)
  • 8 oz cream cheese, softened
  • 1 tablespoon ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 oz deli turkey (oven-roasted or honey smoked)
  • 46 slices provolone cheese
  • Optional: fresh spinach, thinly sliced bell peppers, avocado slices

Instructions

  1. In a medium bowl, combine softened cream cheese, ranch seasoning mix, garlic powder, and a pinch of salt and pepper. Beat with a hand mixer on medium speed until smooth and fluffy, about 2-3 minutes.
  2. Lay one large flour tortilla flat on a cutting board. If stiff, warm in the microwave for about 10 seconds to make pliable.
  3. Using an offset spatula or the back of a spoon, spread a generous, even layer of the cream cheese mixture over the entire surface of the tortilla, going all the way to the edges.
  4. Place 2-3 slices of deli turkey on top of the cream cheese, slightly overlapping to cover the entire tortilla surface.
  5. Lay 1-2 slices of provolone cheese on top of the turkey, covering the surface evenly. Add any optional add-ins now.
  6. Starting from one edge, carefully roll the tortilla into a tight log, using your fingers to keep the filling tucked in. Roll as tightly as possible without tearing.
  7. Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap tightly, twisting the ends to secure. Repeat with remaining tortillas and filling.
  8. Place the wrapped rolls on a baking sheet or large plate and refrigerate for at least 30 minutes, or up to 4 hours.
  9. Once firm, remove from fridge. Unwrap one roll and place on a cutting board. Using a sharp serrated knife, slice into 1-inch thick pinwheels using a gentle sawing motion. Clean knife between cuts.
  10. Arrange pinwheels on a serving platter or pack into lunchboxes. Serve cold or at room temperature.

Notes

Use full-fat cream cheese for best texture; low-fat can cause sogginess. Chilling is non-negotiable for clean slices. For gluten-free, use large gluten-free tortillas. For low-carb, use lettuce or collard green wraps. These taste even better the next day.
