Easy Sticky Honey Garlic Chicken Thighs in Crockpot

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/3 cup (110g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 2 tablespoons ketchup
  • 45 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. In a small mixing bowl, whisk together honey, low-sodium soy sauce, ketchup, minced garlic, rice vinegar, and sesame oil until well combined.
  2. Place chicken thighs in the bottom of a 4-6 quart slow cooker, arranging in a single layer if possible.
  3. Pour the sauce mixture evenly over the chicken. Do not stir.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender.
  5. Using tongs, carefully transfer cooked chicken to a plate or cutting board. Let rest.
  6. Pour the cooking liquid from the slow cooker into a small saucepan. In a separate bowl, whisk together cornstarch and water to make a slurry.
  7. Bring the sauce to a simmer over medium heat. Whisk in the cornstarch slurry and cook, stirring constantly, for 2-3 minutes until thickened and glossy.
  8. Return chicken to the slow cooker (or pour sauce over chicken on the plate) and toss gently to coat.
  9. Serve over steamed rice, garnished with sesame seeds and sliced green onions.

Notes

For extra stickiness, broil the glazed chicken for 2-3 minutes. The sauce thickens as it cools. Leftovers taste even better the next day.
