These Easy Sausage and Pepper Sliders come together in a single skillet and take just 30 minutes from start to finish. The sweetness of caramelized peppers against salty, fennel-spiked sausage, all tucked into a pillowy little bun, makes for an unforgettable weeknight dinner.

  • 1.5 lbs sweet or hot Italian sausage, casings removed
  • 3 large bell peppers (mixed colors), sliced into thin strips
  • 1 large yellow onion, thinly sliced into half-moons
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 12 slider buns (e.g., King’s Hawaiian rolls)
  • 6 slices provolone or mozzarella cheese, halved (optional)

Instructions

  1. Remove the casings from the Italian sausages by making a shallow cut along the length of each sausage and peeling off the casing. Set the loose sausage meat aside.
  2. Slice the bell peppers into thin strips (about 1/4-inch wide) and slice the onion into thin half-moons. Mince the garlic cloves.
  3. Place a large skillet over medium-high heat. Add the loose sausage meat to the hot skillet and break it up into small crumbles with a spatula. Cook for 6-8 minutes, stirring occasionally, until browned and cooked through.
  4. Use a slotted spoon to transfer the cooked sausage to a plate or bowl, leaving the rendered fat in the skillet.
  5. Reduce the heat to medium. Add 1 tablespoon of olive oil to the skillet with the sausage drippings. Add the sliced bell peppers and onions. Season with a pinch of salt and black pepper. Cook for 8-10 minutes, stirring occasionally, until softened and starting to caramelize.
  6. During the last minute of cooking, add the minced garlic to the skillet and stir constantly for 30-60 seconds until fragrant.
  7. Return the cooked sausage to the skillet with the peppers and onions. Stir to combine and cook for another 1-2 minutes. Taste and adjust seasoning if needed.
  8. If using cheese, place a half-slice of provolone or mozzarella on the bottom half of each slider bun. Spoon a generous portion of the sausage and pepper mixture over the cheese. Place the top bun on each slider.
  9. Serve immediately while warm.

Notes

For extra texture, lightly toast the slider buns in a dry skillet before assembling. Use the rendered fat from the sausage to cook the peppers and onions for maximum flavor. Don’t overcrowd the pan when cooking the sausage to ensure proper browning. Leftover filling can be stored in an airtight container in the refrigerator for up to 4 days.
