These Easy Mini Muffin Tin Pizza Bites are the ultimate quick and easy party snack, ready in just 20 minutes. Made with canned biscuit dough, pizza sauce, mozzarella, and pepperoni, they are perfectly bite-sized, endlessly customizable, and disappear fast at any gathering.

  • 1 can (16.3 oz) refrigerated biscuit dough (such as Pillsbury Grands, flaky layers)
  • ½ cup pizza sauce (such as Rao’s or Classico)
  • 1 cup shredded mozzarella cheese (freshly shredded recommended)
  • ½ cup mini pepperoni (or regular pepperoni, chopped)
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon dried oregano
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 12-cup mini muffin tin generously with non-stick cooking spray, including the sides of each cup.
  2. Open the can of biscuit dough carefully. Separate the dough into 8 biscuits (if using Grands) or more if using a smaller can. Let the dough sit on the counter for 5 minutes to warm slightly.
  3. Place a biscuit on a lightly floured surface or between two sheets of parchment paper. Roll it out into a 3-inch circle, about ¼ inch thick. Repeat with remaining biscuits.
  4. Press each dough round into a mini muffin cup, pressing it against the bottom and up the sides to form a cup shape. The dough should come up about ¼ inch above the rim.
  5. Add about 1 teaspoon of pizza sauce into each dough cup. Spread it gently with the back of a spoon.
  6. Sprinkle about 1 tablespoon of shredded mozzarella into each cup. Top with 3 to 4 mini pepperoni pieces, pressing them down slightly.
  7. Brush the exposed dough edges with olive oil. Sprinkle a pinch of garlic powder and dried oregano over the tops.
  8. Bake for 10 to 12 minutes, until the edges are golden brown and the cheese is bubbly and starting to brown in spots. Check at the 10-minute mark.
  9. Cool in the tin for 2 minutes to let the cheese set.
  10. Transfer to a cooling rack using a small offset spatula or butter knife. Let cool for another 2 to 3 minutes before serving.

Notes

Do not overfill the cups; a heaping tablespoon of filling per cup is plenty. Let the biscuit dough sit on the counter for 5 minutes before opening to prevent cracking. Freshly shredded mozzarella melts better than pre-shredded. For a double batch, keep the first batch warm in a 200°F oven while baking the second round. These can be assembled up to 24 hours ahead and refrigerated; add 2 minutes to baking time if baking from cold. To freeze, bake and cool completely, then freeze in a single layer and transfer to a freezer bag for up to 3 months. Reheat from frozen at 350°F for 10-12 minutes.
