  • 4 salmon fillets (skin-on, about 6 oz / 170 g each)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard (optional)
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard (if using), apple cider vinegar, garlic powder, smoked paprika, salt, black pepper, and olive oil until smooth and glossy.
  3. Pat the salmon fillets dry with paper towels.
  4. Place the salmon fillets skin-side down on the prepared baking sheet, spaced about an inch apart.
  5. Brush the glaze generously over the top of each fillet.
  6. Bake for 12-15 minutes, until the salmon is opaque and flakes easily with a fork.
  7. Optional: Broil for the last 1-2 minutes for a slightly caramelized top, watching carefully to avoid burning.
  8. Remove from oven and let rest for 3 minutes. Squeeze fresh lemon juice over the top if desired.
  9. Serve immediately with your favorite sides.

Pat salmon dry before glazing to ensure the glaze sticks and caramelizes well. For thicker fillets, add 1-2 minutes to baking time. If glaze thickens before brushing, warm gently or add a splash of water to loosen. Rest salmon after baking to keep it juicy. Optional broil step adds caramelization but watch carefully to avoid burning.
