  • 1 cup brown rice, cooked
  • 12 tablespoons vegetable or canola oil

Instructions

  1. Rinse 1 cup brown rice under cold water. Combine with 2 ½ cups water in a medium saucepan. Bring to a boil, then lower heat to a simmer, cover, and cook for 40-45 minutes until tender and water is absorbed. Fluff with a fork and set aside.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, toasted sesame oil, and cornstarch slurry. Set aside.
  3. Cut chicken into bite-sized pieces. Mince garlic and grate ginger. Trim snap peas and slice bell pepper if using.
  4. Heat 1-2 tablespoons vegetable oil in a skillet or wok over medium-high heat until shimmering. Add chicken pieces in a single layer and cook for 4-5 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken and set aside.
  5. In the same pan, add more oil if needed. Stir-fry garlic and ginger for about 30 seconds until fragrant. Add snap peas and bell pepper slices, stir-frying for 2-3 minutes until crisp-tender.
  6. Return chicken to the pan with vegetables. Pour the prepared sauce over everything. Stir constantly as the sauce thickens and coats the chicken and vegetables, about 2 minutes.
  7. Serve the honey garlic chicken stir-fry over warm brown rice. Garnish with sesame seeds and sliced green onions if desired.

Notes

Keep heat high enough for a quick sear but avoid burning garlic. Marinate chicken in half the sauce for 20 minutes for extra flavor if desired. Use tamari or coconut aminos for gluten-free option. Reheat leftovers gently with a splash of water to keep sauce moist.
