Instructions

  1. Measure out the soy sauce and brown sugar. Pour 1/2 cup (120 ml) soy sauce into a small saucepan, then add 1/4 cup (50 g) brown sugar. Stir gently to start dissolving the sugar.
  2. Grate about 1 tablespoon of fresh ginger directly into the saucepan using a microplane or fine grater.
  3. Warm the mixture over medium heat, bringing it to a gentle simmer while stirring occasionally to dissolve the sugar fully, about 3-4 minutes.
  4. In a small bowl, mix 1 tablespoon cornstarch with 2 tablespoons cold water until smooth and lump-free to prepare the slurry.
  5. Slowly whisk the cornstarch slurry into the simmering soy sauce mixture to prevent lumps and achieve an even, glossy texture.
  6. Lower the heat slightly and continue stirring for 2-3 minutes until the sauce thickens and coats the back of a spoon with a sticky, glossy finish.
