  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons everything bagel seasoning

  • ½ cup diced bell peppers or mushrooms

Instructions

  1. Cube about 6 everything bagels into roughly 1-inch pieces. Set aside.
  2. In a large bowl, beat 8 eggs with 1 ½ cups of half-and-half or milk until well combined.
  3. Whisk in 1 teaspoon Dijon mustard, then season lightly with salt and black pepper.
  4. Add the cubed bagels to the egg mixture and gently stir to coat all pieces.
  5. Fold in any optional cooked sausage, bacon, or veggies along with chopped green onions if using.
  6. Let the mixture sit for about 10 minutes to allow the bagels to soak up the custard.
  7. Pour the soaked bagel mixture into a greased 9×13-inch baking dish, spreading evenly.
  8. Press down slightly with a spatula to help everything settle into one layer.
  9. Sprinkle shredded sharp cheddar cheese evenly over the casserole.
  10. Add Parmesan cheese, then a generous layer of everything bagel seasoning on top.
  11. Bake uncovered at 350°F (175°C) for 35-40 minutes until the top is golden brown and the center is set but slightly jiggly.
  12. If the top browns too quickly, tent loosely with foil after 25 minutes.
