  • ½ cup panko breadcrumbs (about 50 g)
  • 4 cheddar cheese slices (sharp or mild)
  • 8 small slider buns (potato buns preferred)
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons butter, melted
  • Special sauce:
  • ¼ cup mayonnaise (60 ml)
  • 2 tablespoons ketchup (30 ml)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon pickle juice
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon garlic powder
  • Pinch of salt and pepper
  • Optional toppings: thinly sliced pickles, shredded lettuce, tomato slices, caramelized onions

Instructions

  1. In a large bowl, combine ground beef, panko breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix gently until just combined, about 5 minutes.
  2. Divide mixture into 8 equal portions (about 2 ounces or 60 g each). Shape each into a small patty roughly the size of the slider buns. Make a slight indentation in the center of each patty. (5 minutes)
  3. Heat a cast iron or non-stick skillet over medium-high heat for 2-3 minutes. Add a teaspoon of oil if desired.
  4. Place patties in the hot skillet with space between them. Cook without moving for 3-4 minutes until bottom is golden and crispy. Flip and cook another 2-3 minutes for medium doneness. (6-7 minutes total)
  5. Place a slice of cheddar cheese on each patty, cover skillet with lid or foil to melt cheese evenly for 1-2 minutes.
  6. Brush insides of slider buns with melted butter. Toast buns face down in a separate pan or under broiler until golden and slightly crisp, about 1-2 minutes.
  7. In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, pickle juice, smoked paprika, garlic powder, salt, and pepper. Adjust seasoning to taste. (3 minutes)
  8. Spread special sauce on both sides of toasted buns. Add cheesy beef patty and optional toppings. Close slider and press gently.
  9. Arrange sliders on a platter and serve immediately.

Notes

Avoid overcrowding the pan to maintain crispy crust. Do not press patties while cooking to keep them juicy. Use panko breadcrumbs for best crispiness. Toast buns separately for crunch. Cover skillet to melt cheese evenly.
