Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy fudge removal.
  2. Place the Oreos in a large zip-top bag and gently crush with a rolling pin until you have a mix of crumbs and small chunks. Set aside about 1/4 cup for topping.
  3. In a microwave-safe bowl, combine white chocolate chips and softened butter. Microwave in 30-second intervals, stirring in between, until smooth and fully melted (about 1.5 to 2 minutes total). Alternatively, melt over a double boiler.
  4. In a separate bowl, beat softened cream cheese with powdered sugar and mint extract until creamy and well combined. Add green food coloring a drop at a time until desired color is reached.
  5. Slowly pour the melted white chocolate and butter mixture into the cream cheese mixture, stirring constantly to keep it smooth and even.
  6. Gently fold in the crushed Oreos, saving some for garnish. Avoid overmixing to keep chunks intact.
  7. Pour the fudge batter into the prepared pan, smoothing the top with a spatula. Sprinkle remaining Oreos evenly over the surface.
  8. Refrigerate for at least 2 hours or until firm.
  9. Use the parchment paper overhang to lift the fudge out of the pan, then slice into squares with a sharp knife. For cleaner cuts, warm the knife under hot water and dry before slicing.
